Walnut Tacos

We recently made walnut tacos and to our surprise, they were pretty good! It does not last well so we don’t recommend having any leftovers but they are perfect for a night when you are craving tacos but barely have any calories left for the day. Continue reading to learn how to make this nutritious spin on tacos:

Ingredients
1.5 cups walnuts
1 tsp garlic powder
½ tsp cumin
½ tsp chili powder
1 Tbsp soy sauce
1 Tbsp olive oil
Lettuce boats
Red pepper to taste
Salt and pepper to taste

Cashew Sour Cream
1 cup cashews (soaked overnight)
1/3 cup water
2 Tbsp lime juice
½  Tbsp apple cider vinegar
Pinch of salt

Toppings (Optional)
Carrots
Corn
Purple onions
Avocado
Squeeze of lemon

Directions
Add walnuts to the food processor and pulse until it looks “meaty”. This should not take many pulses. Be sure not to over do it!

Pour walnuts into a bowl and add all ingredients. Add the wet ingredients last.img_0328Add cashews, water, lime juice, avocado and salt to the food processor and blend until smooth.img_0336Place meat mixture in a lettuce boat and top with cashew sour cream and optional toppings.
